Kerala Beef Curry (Nadan Beef)

Ingredients

  • 750g beef, cubed
  • 2 tbsp ROASTICOCO
  • 3 onions
  • 4 tomatoes
  • 2 tsp black pepper (Malabar pepper)
  • 1 tsp garam masala
  • Coconut oil, curry leaves
  • Coconut vinegar or tamarind

Method

  1. Marinate beef with turmeric, chili, salt for 30 minutes minimum.

  2. Heat coconut oil to smoking. Add curry leaves — let them crisp. Add onions and cook very slowly until dark caramel.

  3. Add ROASTICOCO and black pepper. This combination is the heart of Nadan style. Cook 2 minutes.

  4. Add beef on high heat. Sear thoroughly before adding tomatoes.

  5. Add tomatoes, cook until integrated. Add ½ cup water, cover, cook on medium-low for 35 minutes.

  6. Uncover and cook on high for 10 minutes — the masala should coat the beef darkly. Finish with coconut vinegar.
