Nadan beef curry — the pride of Malabar kitchens. Dark, spiced, coconut-rich. The curry that proves slow cooking and great spices are everything.

Marinate beef with turmeric, chili, salt for 30 minutes minimum.
Heat coconut oil to smoking. Add curry leaves — let them crisp. Add onions and cook very slowly until dark caramel.
Add ROASTICOCO and black pepper. This combination is the heart of Nadan style. Cook 2 minutes.
Add beef on high heat. Sear thoroughly before adding tomatoes.
Add tomatoes, cook until integrated. Add ½ cup water, cover, cook on medium-low for 35 minutes.
Uncover and cook on high for 10 minutes — the masala should coat the beef darkly. Finish with coconut vinegar.
