Heat ghee in a pressure cooker. Add whole spices — cardamom, cloves, cinnamon — and let them sizzle for 30 seconds.
Add onions and cook on medium until caramelized and deep golden, about 20 minutes.
Add ROASTICOCO and cook, stirring, for 90 seconds until fragrant and slightly darker.
Add mutton and sear on high heat for 5 minutes. Every surface should be golden.
Add tomatoes, garam masala, salt, and water. Pressure cook for 25–30 minutes.
Release pressure naturally. The gravy should be thick and coating the meat. If too thin, reduce on high for 5 minutes.
