Kerala Egg Roast

The breakfast curry that converts skeptics. Crispy golden eggs in a deeply spiced, slightly caramelized masala. Ready in 30 minutes.

Ingredients

  • 6 eggs, hard boiled
  • 1 tbsp ROASTICOCO
  • 2 onions, sliced
  • 2 tomatoes
  • 1 tsp chili powder
  • 3 tbsp coconut oil
  • Curry leaves

Method

  1. Score the boiled eggs with a knife (helps them absorb masala). Fry in hot oil until golden on all sides. Set aside.

  2. In the same oil, add onions and cook until deeply caramelized — dark edges are good here.

  3. Add ROASTICOCO and chili powder. Stir on medium heat for 60 seconds.

  4. Add tomatoes, cook until broken down. Season with salt.

  5. Return eggs to the pan. Coat gently and cook 3 more minutes on low heat.

  6. Finish with fresh curry leaves. The masala should cling to each egg perfectly.
