Kerala Vegetable Istew

The mild, coconut-milk vegetable stew traditionally served with appam. Gentle, aromatic, and impossibly comforting.

Ingredients

  • Mixed vegetables: potato, carrot, green beans, peas
  • 1.5 tbsp ROASTICOCO
  • 2 cups coconut milk
  • 1 onion, sliced
  • Green chilies, ginger
  • Coconut oil
  • Whole spices

Method

  1. Heat coconut oil in a wide pan. Add whole spices, onions, green chilies, and ginger. Cook gently until onion softens but doesn't brown.

  2. Add ROASTICOCO and stir for 30 seconds. Unlike other recipes, keep the heat low here — we want aroma, not color.

  3. Add harder vegetables (potato, carrot) first with a splash of water. Cover and cook 8 minutes.

  4. Add remaining vegetables. Pour in coconut milk and bring to a gentle simmer — never boil.

  5. Season with salt. The stew should be ivory-white, aromatic, and gently thickened.

  6. Serve immediately with appam or Kerala white rice.
